So I joined Costco about 5 months ago and I bought a casepack of chickpeas with the idea of making so much hummus my fridge would always be full! Hummus is one of my go-to healthy snacks and I’d heard from so many people that it’s super easy to make. Well, when I bought my chickpeas I had no idea that I needed Tahini sauce. 5 months later, I finally remembered to grab some tahini at the grocery!
I was also worried about taking the hummus plunge because I don’t own a food processor (if anyone wants me to try their brand send me one and I’ll tell everyone how great it is. Wink wink😉).
Worry schmurry! This morning I broke out the blender and it worked like a charm. I figured if I can make my shakeology smoothies with that bad boy, then if anything I’ll be drinking a glass of healthy fat, protien packed hummus!
I’ll admit that using a food processor is probably much easier, but just because I didn’t have the right tool didn’t mean I couldn’t get the job done. Now that’s a life lesson!
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup tahini
- 2 tbsp EVOO (extra virgin olive oil)
- 1 19 oz can chickpeas
- 1/8th cup of crumbled feta cheese
- 1 tsp Himalayan pink sea salt
In food processor (or blender in my case) mix lemon juice and tahini until well blended. You may need to scrape the sides and mix with a spoon and pulse several times to mix well.
Add olive oil to the blender and mix/stir again. Once you have a creamier consistency, add 1/2 of the chickpeas and blend again. Add the remainder of the chickpeas along with feta and salt and continue to mix until well blended. If the texture isn’t as creamy as you would like, add a tbsp of water at a time while blending until it’s to your liking.
*Since I was using a blender I was a little worried about getting it creamy enough. I removed the skins from the chickpeas just in case. You don’t necessarily have to do this.
